Turkey and Bacon Club Sandwich

Ingredients

  • 2 streaky bacon rashers
  • butter for spreading
  • 3 slices bread white or brown, or a mix
  • 1 thick slice cooked turkey
  • a little mayonnaise and mustard
  • few lettuce leaves, shredded
  • 1/2 avocado sliced

Method

  1. Cook the bacon under the grill until crisp, then transfer it to kitchen paper to drain.
  2. Spread butter on one side of a bread slice, then layer the turkey, a little mayonnaise and the shredded lettuce on top.
  3. Take the next slice of bread and butter it on both sides, then place it over the lettuce layer.
  4. Spread a little mustard over this bread, then top it with the cooked bacon and the sliced avocado.
  5. Butter the final slice of bread and place it on top. Gently press the whole sandwich down, then slice it diagonally into two halves.
