Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 cup couscous
  • 8 cups water
  • 2 zucchini, chopped
  • 1 potato, chopped
  • 20 green beans, chopped
  • 2 carrots, chopped
  • 2 tablespoons tomato puree
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon red chile powder
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon salt
  • 0.5 cup milk

Method

  1. Place the butter in a pot and melt it. Cook the chopped onion, stirring, for about 5 minutes until it turns translucent. Add the couscous and continue to cook and stir for approximately 5 minutes until it takes on a browned colour.
  2. Pour in the water, then add the chopped zucchini, potato, green beans and carrots. Stir in the tomato puree, ground coriander, red chile powder, ground cumin and salt. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes until the vegetables are tender. Finish by stirring the milk into the soup.
