Swordfish Kebabs

Ingredients

  • 2 lbs swordfish steaks, cut into large cubes
  • 3 tablespoons olive oil
  • 1/2 lemon, juice of
  • 1 garlic clove, crushed
  • 1 teaspoon paprika
  • 3 tomatoes, quartered
  • 2 small onions, cut into wedges
  • salt & freshly ground black pepper

Method

  1. Put the fish cubes into a large dish.
  2. In a separate small bowl, mix the olive oil, lemon juice, crushed garlic, paprika, salt, and black pepper together.
  3. Pour this marinade mixture over the fish in the dish.
  4. Cover the dish loosely with clear film and allow it to marinate in a cool place for up to 2 hours.
  5. Take skewers and thread the marinated fish cubes onto them, placing pieces of tomato and onion wedge in between the fish.
  6. Cook the assembled kebabs under a grill for 7 to 10 minutes, remembering to turn them and baste them often with the leftover marinade.
  7. Present the cooked kebabs accompanied by a generous amount of fresh salad.
