Sticky Maple Pork with Apples
Pork fillet is a lean cut that cooks quickly for a speedy meal. This British dish combines sliced pork with apples, which are pan-fried before being simmered in a glossy sauce of maple syrup, vinegar, and garlic. The finishing touch of wholegrain mustard adds a piquant note. It's a simple main course ideal for a weeknight supper, ready in about 20 minutes. Serve it alongside plain rice or the suggested crispy onion rice.
Ingredients
- 600g pork fillet
- 1 tbsp olive oil
- 2 eating apples cored and cut into eighths
- 1 garlic crushed
- 2 tbsp maple syrup
- 1 tbsp white or red wine vinegar
- 2 tbsp wholegrain mustard
Method
- Slice the pork into pieces roughly 3cm thick. Warm the oil in a large non-stick frying pan, place the pork in the pan, and cook until both sides have a light brown colour, which should take around 5 mins altogether. Remove the pork from the pan and set it aside. Put the apple pieces into the pan and cook them for 3-4 mins until they begin to soften.
- Add the garlic, maple syrup, vinegar and 3 tbsp water to the pan, stirring to combine. Bring the mixture to a boil, then put the pork back into the pan along with any collected juices. Allow it to simmer for a few more mins, stirring occasionally, until the pork is fully cooked and the sauce has thickened into a sticky glaze. Mix through the wholegrain mustard, then it is ready to serve with plain rice or the crispy onion rice mentioned.
