Quick beef and broccoli noodles
This fast Asian noodle dish combines tender beef strips and fresh broccoli with egg noodles. A flavourful sauce made from soy, oyster sauce, and aromatics brings it all together. It's a convenient and satisfying low-fat option, perfect for a weeknight supper. You can have this complete meal on the table in only 20 minutes.
Ingredients
- 3 blocks egg noodles
- 1 head broccoli cut into small florets
- 1 tbsp sesame oil
- 400g pack beef stir-fry strips
- sliced spring onion
- 3 tbsp low-salt soy sauce
- 2 tbsp oyster sauce (not oyster stir-fry sauce)
- 1 tbsp tomato ketchup
- 2 garlic cloves crushed
- 1 thumb-sized knob ginger peeled and finely grated
- 1 tbsp white wine vinegar
Method
- Combine the soy sauce, oyster sauce, tomato ketchup, crushed garlic, grated ginger and white wine vinegar in a small bowl to create the sauce.
- Cook the egg noodles in boiling water as directed on the packet.
- One minute before the noodles finish cooking, add the broccoli florets to the same pot.
- While the noodles cook, warm the sesame oil in a wok until it is very hot.
- Stir-fry the beef strips in the hot oil for 2-3 mins until they are nicely browned.
- Pour the prepared sauce into the wok with the beef, stir it through and allow it to simmer briefly.
- Remove the wok from the heat.
- Drain the cooked noodles and broccoli, then toss them into the beef and sauce mixture.
- Serve immediately, topped with sliced spring onion.
