Prosciutto Skewered Chicken with Fried Sage Leaves
This indulgent chicken dish is perfect for a special dinner for two. Chicken breasts are flattened, wrapped in prosciutto, and pan-fried until golden. They are then served with a rich sauce made from the pan juices, white wine, and cream, topped with crispy fried sage leaves. It's a complete meal when paired with simple pasta. The preparation takes about 30 minutes from start to finish.
Ingredients
- 2 boneless skinless chicken breasts fillets
- 4 slices of prosciutto or smoked streaky bacon
- 1 tbsp plain flour
- 1 tbsp olive oil
- handful of sage leaves
- 25g butter
- 150ml dry white wine
- 4 tbsp double cream or crème fraîche
- cooked pasta to serve
Method
- Place the chicken breasts between two sheets of greaseproof paper and flatten them with a rolling pin until they are about twice their original size. Lay two slices of prosciutto over each breast and secure them using cocktail sticks. Lightly dust each breast with the plain flour, then season with salt and pepper. (You can prepare the chicken to this stage several hours in advance and keep it chilled.)
- Warm the olive oil in a frying pan. Add the sage leaves. they should sizzle upon contact. Fry them for 30 seconds until crisp, taking care as they can burn easily. Remove the leaves with a slotted spoon and drain them on kitchen paper. Melt the butter in the same pan, then fry the chicken for 3-4 minutes on each side until it is cooked through and nicely browned. Take the chicken out of the pan and set it aside.
- Pour the dry white wine into the pan, stirring to loosen all the browned bits from the bottom. Allow the mixture to bubble until the wine has reduced by about half. Stir in the double cream or crème fraîche. Return the chicken to the pan to warm through. Scatter the fried sage leaves over the top and serve with cooked pasta that has been tossed with a little olive oil and some freshly chopped sage.
