Mauritian Chicken Curry
This aromatic Mauritian chicken curry features tender thigh pieces and potatoes cooked in a spiced gravy. It is accompanied by a fresh tomato and chilli side dish known as satini pomme d’amour. Traditionally served with fluffy basmati rice, cucumber, and soft rotis, it makes a complete and flavourful meal for four people. The dish comes together in just 50 minutes, perfect for a weeknight dinner or supper.
Ingredients
- 2 tbsp vegetable oil
- 8 curry leaves finely chopped
- 1 medium onion finely chopped
- 2 garlic cloves finely grated
- 2cm ginger finely grated
- 1 cinnamon stick
- 1 green chilli finely chopped
- 1 tbsp thyme leaves
- 3 tbsp Mauritian curry powder
- 600g skinless chicken thigh fillets, chopped
- 2 medium tomatoes chopped
- 2 large potatoes cut into quarters
- 1/2 red onion finely sliced, to serve
- 1 tbsp coriander leaves to serve
- basmati rice sliced cucumber, fresh rotis and satini pomme d’amour, to serve
- 2 large ripe tomatoes finely chopped
- 1 green chilli finely chopped
- 1/2 white onion finely chopped
- 1 tbsp olive oil
Method
- Warm the oil in a large saucepan. Add the curry leaves, onion, garlic, ginger, cinnamon stick, chilli and thyme, cooking for 5 mins until the onion softens, stirring often.
- Combine the curry powder with a little water in a bowl to form a paste. Stir this paste into the pan for about 30 seconds until fragrant. Add the chicken pieces and stir to coat them in the spices.
- Put in the chopped tomatoes, potatoes and 1 tsp salt. Add water until it nearly covers the chicken and potatoes. Cook for around 25 mins until everything is cooked through, then remove the cinnamon stick.
- For the satini pomme d’amour, combine all its ingredients in a bowl. Ladle the curry into bowls and top with coriander leaves and red onion. Serve with basmati rice, cucumber slices, rotis and the tomato side.
