⏱ 25 mins 🍽 Serves 4 🌶 british ✅ Easy 🏷 Main course

This British main course features chicken thighs marinated in a vibrant blend of lemon juice, shredded ginger, garlic, soy sauce, and Chinese five-spice powder, sweetened with light muscovado sugar. The chicken is then grilled or barbecued until dark golden and cooked through. It's an ideal dish for a quick dinner or lunch, serving four people. The recipe suggests pairing it with new potatoes and a green salad for a complete meal.

Lemon & five-spice chicken

Ingredients

  • 2 lemons
  • 3 tbsp light muscovado sugar
  • thumb-sized piece ginger shredded (no need to peel)
  • 2 garlic cloves crushed
  • 5 tbsp soy sauce
  • 1/2 tsp Chinese five spice powder
  • splash dry sherry or dry white wine
  • 8 chicken thighs

Method

  1. Juice a single lemon and slice the second one. Combine these with all the other ingredients in a large food bag, then shake thoroughly to coat the chicken. Allow it to rest for 10 mins, or for up to 24 hrs if preparing in advance.
  2. Set your grill to high or prepare the barbecue. Remove the chicken from the marinade, letting any extra drip off. Cook it under the grill or on the barbecue for 20 mins, basting with the reserved marinade periodically. Turn the pieces occasionally until they are fully cooked and have a dark golden brown colour. It pairs well with new potatoes and a green salad.
