Jamaican Cornmeal Porridge
This authentic Jamaican cornmeal porridge is a creamy and comforting breakfast dish. It blends cornmeal with coconut milk and whole milk, sweetened with sugar and flavoured with vanilla, nutmeg, and cinnamon. Raisins are stirred in at the end for a fruity touch. The entire process takes just 25 minutes to create a single, satisfying serving of this classic Caribbean staple.
Ingredients
- 1 cup water
- 0.33333334326744 cup cornmeal
- 0.25 cup whole milk
- 0.25 cup coconut milk
- 3 tablespoons white sugar
- 0.5 teaspoon vanilla extract
- 0.5 teaspoon salt
- 0.25 teaspoon ground nutmeg
- 0.25 teaspoon ground cinnamon
- 2 tablespoons raisins
Method
- Place the water, cornmeal, whole milk, coconut milk, white sugar, vanilla extract, salt, nutmeg, and cinnamon into a blender and process until completely smooth. Pour this mixture into a saucepan.
- Heat the cornmeal mixture in the saucepan until it reaches a boil, whisking now and then. Once it starts to thicken, which should take about 5 minutes, lower the heat when you see slow bubbles. Keep cooking and stirring often for another 5 minutes until it reaches your preferred consistency. Mix in the raisins.
- Take the pan off the heat, put a lid on it, and let it stand to cool a little before you serve it. This should take about 5 minutes.
