Hearty Kielbasa Stew
This robust stew features sliced kielbasa sausage browned and then simmered with a medley of vegetables including cabbage, carrots, celery and onion. The rich tomato base, made with tomato sauce, diced tomatoes and condensed soup, is flavoured with herbs like thyme and a bay leaf. It's a complete, warming dish that cooks in one pot in just 50 minutes, yielding four to six generous servings.
Ingredients
- 1 tablespoon butter or 1 tablespoon oil
- 1 (16 ounce) package kielbasa, sliced 1/2 inch
- 2 cups sliced carrots
- 1 cup sliced celery
- 1 cup chopped onion
- 4 cups chopped cabbage
- 1 cup white wine or 1 cup apple juice
- 1 (15 ounce) can tomato sauce
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (10 3/4 ounce) can condensed tomato soup
- 1/2 cup chopped fresh parsley
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method
- Melt the butter in a Dutch oven, then add the sliced kielbasa and cook until it has a light brown colour.
- Take the kielbasa out using a slotted spoon and place it to one side.
- Put the carrots, celery and onion into the pot and cook them until they have softened.
- Stir in all the other ingredients along with the set-aside kielbasa, bring the mixture to a boil, then lower the heat, cover the pot and let it simmer for 20 minutes until the vegetables are tender.
