Griddle Scones with Honey

Ingredients

  • 200g self-raising flour
  • 1/2 tsp ground cardamom (about 10 pods, ground)
  • 25g butter
  • 25g light muscovado sugar
  • 1 egg
  • about milk
  • butter and a honeycomb or jar of honey, to serve

Method

  1. Combine the flour and cardamom in a bowl, then rub the butter into the mixture. Stir in the sugar. In a measuring jug, beat the egg and add milk until the liquid reaches 100ml/3½fl oz. Gradually pour this into the dry ingredients, mixing first with a knife and then your hands to form a soft dough that isn't sticky. On a floured surface, knead the dough until smooth.
  2. Split the dough into three equal pieces, rolling each into a circle as thick as a £1 coin. Slice each circle into four wedges. Heat a heavy-based frying pan. Cook the scone wedges in batches for a couple of mins per side until they turn golden brown. Serve them warm, topped with butter and a generous drizzle of honey.
