Griddle Scones with Honey
These simple griddle scones are a delightful British bake, ready in just 25 minutes. Flavoured with aromatic cardamom and light muscovado sugar, they are cooked on a hot pan until golden. Best served fresh from the griddle, generously spread with butter and drizzled with creamy honey for a comforting treat ideal for brunch or afternoon tea.
Ingredients
- 200g self-raising flour
- 1/2 tsp ground cardamom (about 10 pods, ground)
- 25g butter
- 25g light muscovado sugar
- 1 egg
- about milk
- butter and a honeycomb or jar of honey, to serve
Method
- Combine the flour and cardamom in a bowl, then rub the butter into the mixture. Stir in the sugar. In a measuring jug, beat the egg and add milk until the liquid reaches 100ml/3½fl oz. Gradually pour this into the dry ingredients, mixing first with a knife and then your hands to form a soft dough that isn't sticky. On a floured surface, knead the dough until smooth.
- Split the dough into three equal pieces, rolling each into a circle as thick as a £1 coin. Slice each circle into four wedges. Heat a heavy-based frying pan. Cook the scone wedges in batches for a couple of mins per side until they turn golden brown. Serve them warm, topped with butter and a generous drizzle of honey.
