Fresh Tomato Chutney

Ingredients

  • 6large vine-ripened tomatoes
  • 1large red onion finely chopped
  • 2handfuls of fresh coriander finely chopped
  • 1 tbsp olive oil
  • 1 tsp cumin seed

Method

  1. Cut the tomatoes in half, discard the seeds, and chop the remaining flesh. Transfer the chopped tomato to a sieve suspended over a bowl to allow the extra liquid to drain.
  2. Combine the chopped onion and coriander in a mixing bowl. Warm the olive oil and cook the cumin seeds for about 30 seconds before pouring them into the bowl. Add the drained tomatoes, stir everything together, then cover the bowl and place it in the refrigerator to chill.
  3. When ready to serve, season the chutney with salt according to your taste and present it.
