These savoury potato scones are pan-fried to a golden brown, creating a satisfying brunch centrepiece. The dough combines mashed potato with flour, eggs and butter for a soft texture. Potato Scones

Ingredients

  • 250g potatoes cut into cubes
  • 200g plain flour
  • 1 tsp baking powder
  • 50g butter melted, plus extra for frying
  • 3 tbsp milk
  • 2 eggs beaten
  • 2 tsp oil for frying

Method

  1. Boil the potato cubes in salted water until soft. Drain them thoroughly before mashing. Sift the plain flour and baking powder together, then combine with the melted butter, milk, beaten eggs and the mash. Season well and mix into a sticky dough.
  2. Warm some butter and 2 tsp oil in a large pan. Spoon dollops of the dough into the pan, frying them for 3 mins per side until golden. Cook in 2 batches if needed, keeping the first batch warm. Serve with crisp bacon and grated mature cheddar.
