Easy Italian Bean Salad
This vibrant Italian bean salad is a simple and speedy side dish, ready in just 10 minutes. It combines cannellini and butter beans with spring onions, garlic and red chilli, all tossed in a classic olive oil and white wine vinegar dressing. Finished with fresh parsley, it's an ideal accompaniment for a summer barbecue or a light lunch. Serves 8.
Ingredients
- 1 bunch spring onions
- 2 garlic cloves crushed
- 1 red chilli seeded and finely chopped
- 2 x 400g cans cannellini beans drained and rinsed
- 1 can of butter beans
- 6 tbsp olive oil
- 2 tbsp white wine vinegar
- plenty of chopped parsley
Method
- Finely slice the spring onions and place them in a large bowl with the crushed garlic and chopped red chilli.
- Add the drained and rinsed cannellini beans and the butter beans to the bowl and mix to combine.
- In a separate small bowl or jug, whisk together the olive oil and white wine vinegar, seasoning it well.
- Pour the dressing over the bean mixture and stir everything together thoroughly.
- Finally, stir through a generous amount of chopped parsley before serving.
