Chocolate & Banana French Toast

Ingredients

  • 1 ripe banana
  • 75g milk chocolate chopped
  • 4 slices crusty white bread from a round loaf
  • 3 medium eggs
  • 1 tbsp double cream
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 25g unsalted butter
  • ground cinnamon to serve
  • icing sugar or extra maple syrup, to serve (optional)

Method

  1. Place the banana in a small bowl and mash it thoroughly with a fork. Stir in the chopped chocolate until well combined.
  2. Arrange two slices of bread on your work surface. Spread the chocolate and banana mix evenly over each slice, leaving a small border. Place the remaining bread slices on top to form two sandwiches, pressing down gently.
  3. Whisk the eggs, double cream, maple syrup and vanilla extract together in a shallow dish. Melt the butter in a large frying pan. Soak one sandwich in the egg mixture, turning it to coat both sides completely. Transfer it to the hot pan and cook for about 1 min per side until golden and the chocolate softens. Repeat with the second sandwich. Serve halved, sprinkled with ground cinnamon and icing sugar or extra maple syrup if desired.
