Cheesy French Toast with Ham and Grilled Vine Tomatoes
This is a simpler take on the classic croque-monsieur, ideal for feeding a group. Slices of baguette are dipped in a mixture of beaten eggs, milk, grated Gruyère and chives, then fried until golden. They are served with grilled cherry tomatoes on the vine, sliced ham and fresh watercress for a complete and satisfying breakfast.
Ingredients
- 5 eggs beaten
- 4 tbsp milk
- 140g gruyère grated
- 1 tbsp chopped chives
- knob of butter
- 1large baguette thickly sliced
- 250g cherry tomatoes on the vine
- olive oil for grilling
- 250g sliced ham - about 25 slices (James used Serrano)
- watercress to serve
Method
- Set your grill to high. Combine the eggs, milk, cheese and chives in a shallow bowl, whisking them together. Melt the butter in a large non-stick pan. Coat bread slices in the egg mixture and fry them in the pan for 3-5 mins per side until crisp and golden. You can keep them warm in a low oven if required.
- Arrange the vine tomatoes on a baking tray, drizzle with olive oil and season. Grill them until they begin to soften and blister. On a large serving platter, assemble the cheesy French toast, grilled tomatoes, ham slices and a bunch of watercress for everyone to help themselves.
