Beef Stir-Fry
This Asian-inspired beef stir-fry is a convenient one-pan dinner. Strips of beef are marinated in a savoury blend of sauces, then quickly cooked with spring onions and roasted peppers. The entire dish comes together in just half an hour, making it an ideal choice for a speedy yet flavourful family meal. Serve it alongside boiled rice for a complete and satisfying dinner.
Ingredients
- 500g stir fry beef strips
- 2 tbsp balsamic vinegar
- 2 tbsp dark soy sauce
- 2 tbsp Worcestershire sauce
- small bunch spring onions sliced on the diagonal
- 200g roasted antipasto peppers in oil or vinegar, drained and sliced
- boiled rice to serve
Method
- Place the beef strips into a medium bowl that is not metallic. Pour over the balsamic vinegar, dark soy sauce, and Worcestershire sauce to cover the meat. Allow it to marinate for 20 mins, or for a deeper flavour, leave it overnight.
- Get a small wok very hot without adding any oil. Add the beef along with all the marinade and the sliced spring onions. Stir fry the contents for 2 mins. Introduce the drained and sliced roasted peppers, continuing to stir fry for a further 2 mins. Spoon the finished stir-fry into shallow bowls and accompany with boiled rice.
