This speedy Italian supper combines pork loin chops with a tangy marinade of balsamic vinegar, mustard and garlic. After a brief marinate, the chops are griddled and served with a warm sauce made from the pan juices, green olives and chopped basil. It's a flavourful main course that comes together in 20 minutes, perfect for a weeknight dinner. Serve it with your favourite pasta for a complete meal.

Balsamic Pork with Olives

Ingredients

  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 2 garlic cloves crushed
  • 4 boneless pork loin chops
  • 2 handfuls green olives pitted and halved
  • large handful basil chopped

Method

  1. Combine the olive oil, balsamic vinegar, mustard and crushed garlic in a bowl. Make shallow cuts on both sides of the pork chops, season them, and place in a dish. Pour the balsamic mixture over the meat and allow it to marinate for 5 mins.
  2. Get a griddle pan very hot. Take the pork from the marinade, brushing off any garlic pieces, and cook for 4 mins on each side. Set the cooked meat aside to keep warm. Add the reserved marinade and the halved olives to the pan and cook for 2 mins. Mix in the chopped basil. Pour any resting juices from the pork into the pan, then spoon the finished sauce over the pork to serve.
