Amaretti Biscuits Mascarpone Dessert
This indulgent Italian dessert blends elements of trifle and tiramisu. Apricots are roasted with orange zest and juice, then layered in a bowl with amaretti biscuits and a smooth mixture of mascarpone and vanilla custard. The finished dish is generously scattered with grated dark chocolate and chilled before serving, creating a simple yet impressive buffet or dinner party treat.
Ingredients
- 1kg apricot halved and stoned
- 1 large orange grated zest and juice
- 85g golden caster sugar
- 2 x 250g tubs mascarpone
- 500g tub vanilla custard
- 140g amaretti biscuit
- about 50g/2oz grated dark chocolate
Method
- Set your oven to 220C/fan 200C/gas 7. Place the apricot halves in a roasting tin, mixing them with the orange zest, juice and 85g sugar. Roast for 15-20 mins until tender. You may peel off the skins if preferred. Transfer to a bowl and allow to cool.
- Combine the two tubs of mascarpone with the 500g tub of vanilla custard, whisking them together until you have a uniform, smooth blend.
- Put the 140g of amaretti biscuits into a large glass bowl. Spoon the cooled apricots over them, followed by the custard mixture. Finish with a generous scattering of about 50g grated dark chocolate. Cover the bowl and place it in the fridge to chill until you are ready to serve.
